Peanut Butter Flax Cookies






While I can't have peanut butter or flax, this is a tasty easy cookie that is egg-free and vegan an a breeze to whip up; all you need is a bowl and a spoon.  My fave version is the same recipe using sunflower butter instead of peanut butter and ground chia seeds instead of flax, so up to you!  Both work equally well, and both are an easy protein-filled treat.

This is a flourless, chewy cookie that is made with optional nondairy chocolate chips.  You can omit them, but it will be way less sweet, almost savory.


Peanut Butter Flax Cookies

Ingredients:

1 tablespoon ground flax mixed with 2 tablespoons water
1/2 cup peanut butter (or other butter of your choice)
1 tablespoon coconut oil
1 teaspoon vanilla
1 teaspoon cinnamon
1/3 cup agave syrup
1teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup nondairy mini chocolate chips

Directions:

1.  Let flax meal sit with water to form a flax "egg".
2.  Mix all ingredients in a bowl, stirring chocolate chips in last.
3.  Roll into little balls, flatten slightly, and bake 8-10 minutes at 350 degrees.


I know somebody who got a little sample minus the chocolate chips ;)
