Avocado Brownies with Almond Butter


So you may have heard of, or eaten avocado brownies.  No?  Avocados are another great metabolism boosting food, and great source of healthy fat.  Not to mention the creamy texture that works well in desserts and replaces butter and oil. 

Finally my husband returned home--and was greeted with a gluten-free dessert that contained chocolate and almond butter, two of his favorite things.  I waited to tell him about the avocado part...

Avocado Brownies with Almond Butter
(gluten-free and dairy-free, not vegan.  I swear more vegan recipes coming soon!)



Ingredients:

1 medium ripe avocado, pitted
3-4 oz nondairy semisweet or unsweetened chocolate melter with 1TBSPP coconut oil
1/4 cup almond butter
1/3 cup honey
3 eggs
2 teaspoons vanilla extract
2 tablespoon brown rice flour or coconut flour
1 teaspoon baking soda
1/2 teaspoon baking powder

Directions:

1. Food process avocado until no large lumps remain.
2.  Melt chocolate and oil in a bowl, stirring until no chocolate lumps remain (check frequently to not burn).
3.  Let chocolate mix cool, add in all ingredients to food processor.  (Make sure chocolate is not hot before the eggs are added in).  Food process, then pour mix into parchment paper-lined 8x8" square pan.
4.  Bake 36-40 min or until center is not too jiggly.  Let cool, cut and serve!  Yields 9 squares.
